Cook While You Spin : Pulled Pork Sandwiches

Ingredients

1.5 to 2 lb boneless pork roast
small onion, sliced into rings
1-2 cups of your favourite BBQ sauce
Kaiser or other crusty rolls

Sandwich garnishes:  lettuce, mayo, onions…  whatever you fancy.

Instructions

Place the roast in the bottom of the crockpot.  Layer onions on top.  Cover with 1-2 cups of your favourite BBQ sauce.  Cover and cook on high for about 2 hours, then on low for 2-3 more hours (I usually start it about 1 pm for 6 pm dinner – if you wish, you could set this up in the morning on low for a longer cooking time – I don’t think you can overdo this roast; the crockpot will keep it moist).  Turn the roast a few times during cooking.

Remove from the crockpot to a cutting board and pull the meat apart with a fork.  Arrange on platter and spoon sauce over top.  If there is sauce remaining, serve in a bowl alongside.

Allow folks to make their own sandwiches, as desired.  Serve with salad or chips.

Do not plan to have leftovers.  It is almost guaranteed there will not be any.
