This dish turned out to be a real challenge because of the rice. Most recipes that involve rice and the slow cooker have the rice cooked separately. When I am concentrating on cables, it is unlikely I will stop in time to make rice, so that was not going to work. […]
This is possibly one of the simplest recipes around, and one of the tastiest.
Tangy Southwest-style pork, served over rice.
What is your earliest slow cooker memory? I remember an early Crock Pot in avocado green sitting on the kitchen counter. The first slow cooker I purchased myself was one of the metal rectangular varieties. It was a poor quality appliance and I soon learned that traditional crock pot recipes were never going to work in the device. Turns out it was better suited to growing geraniums on the deck than cooking baked beans.
Tasty, easy to prepare and only one pot to clean, who could ask for anything more?
I no longer have a slow cooker, so I make this on the stovetop.
